INGREDIENTES:
4 ñames medianitos
2 tazas de arroz integral cocinado simple (ojalá Bonavista, el orgánico) O arroz precocido si no le gusta el integral *
1/4 taza de cebolla morada picadita fina
1/4 taza de aceite de oliva extra virgen
Jugo de dos limones mesinos
3 cucharadas de hierbabuena picadita fina
1 cucharada de albahaca fresca picadita fina
1 cucharada de perejil fresco picadito fino
1 cucharadita de jengibre fresco rallado fino
3 dientes de ajo crudo rallados fino
Sal
Pimienta negra
* Se consigue en la Feria Verde de Aranjuez y en tiendas verdes como Verdísimo o Metromercados. Cuesta aproximadamente 1800-2000 colones y honestamente es mucho más suavecito que los integrales que se consiguen en los supermercados regulares.

2 cups cooked brown rice (the organic Bonavista is ideal) or pre-cooked rice if you don't enjoy brown rice *
1/4 cup finely diced purple onion
1/4 cup extra-virgin olive oil
The juice of two limes
3 tablespoons finely chopped spearmint
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh parsley
1 teaspoon grated fresh ginger
3 grated garlic cloves
Salt
Black pepper
*You can find it at the Feria Verde de Aranjuez or green stores like Verdísimo o Metromercados. Honestly it is so much softer than the regular brown rice brands that it is worth trying. It costs around 1800-2000 colones.
I know! Still crazy about the yams! This recipe is super easy (and superfoody!) and you can make it beforehand and refrigerate. You bake the yams (already cubed) on an oiled baking sheet sprinkled with olive oil, salt and black pepper. They take around 20-25 minutes at 350 degrees until they get soft. Make the vinaigrette by whisking the olive oil, fresh herbs, lime juice, garlic and ginger, salt and pepper with a fork. Finally simply mix everything well in a big salad bowl, including the onion! Delicious and full of nutrients! Enjoy!
